Yellow Squash

I have lovely customers who always offers the bounty from her garden.  I always say "yes, but please don't give me a lot because I'm just me".  She always ignores me and brings me enough for an army.    Have you ever tried to give away squash during the season?  It is impossible.  I tried to dump some on my neighbor but he's trying to find a home for his excess, too.  I ended up leaving with home grown 'maters. 

I just sauteed up some with butter, onion, garlic and S&P.  I stuck some on a fork and fed it to the snots.  I haven't even made a dent in what she gave me.  I'll be shitting yellow for as long as it lasts.  I guess I can feed what starts going soft to the red wigglers but that seems such a shame.

You might freeze some...but like use, the freezers quickly gets loaded.... ;D....we're waiting for the peppers and tomatoes...love stuffed peppers...MMmm

I've never frozen squash but I will this time.  Do you blanch them first?  I kinda want not to blanch them so they won't be all soggy when defrosted.

A quick dip doesn't hurt....them....cut in chunks and freeze...we haven't grow squash here in a year, or so....and that was zucchini...
