Easy peasy broccoli with Hollendase

If you're into the flavor, not the looks, do this.  It came from my own head and it is good!  Boil your broccoli.  Before it's quite ready, cut off the heat on the burner, drain the broccoli in a colander.  As soon as it has drained put it back in the pot and on to the burner that you've turned off (it will hold some residual heat).  Dump in a ton of butter.  Squirt it with a lot of lemon juice.  Mix it up then dump in an egg yoke and stir again.

I do this on a gas burner.  If you use electric to cook you will need to slow the time between draining and adding the butter, lemon, and egg yoke.
