Sunday's gumbo

When I nail it I nail it and I nailed it this time.  I started with a recipe from the internet, then thought that some of this and and a bit of that would make it even better.  Sometimes this technique doesn't work and sometimes I am a genius cook.  Today I am a rare genius. 

I wish I were more hungry but I've been tasting and tweaking all day.  But the rice is on, so I will have one bowl while knowing that it will taste even better after a day in the fridge.

Then I decided that I would brown slices of cajun smokes sausage and add some Mexican chorizo.  I make the roux using the pork drippings.  I had some home grown 'maters I tossed in and an over abundance of home grown garlic.

Always move forward. Never look back.

No.  I decided not to add the oysters.  I just didn't think they'd work in the dish.
