The curry was very tasty but not what it should have tasted like. Next time, more coconut milk, less chicken stock.
Beef stew for me with scratch biscuits..... Maybe tomorrow night we'll have sausage gravy and biscuits!!! Yum Yum Yum lol

That's on my list of things to make..... I've got some very nice skinless chicken breasts in the freezer.

I suggest that you use thighs rather than breasts. Breast get dry. Thighs stay moist and flavorful. I used bone in because there's a lot of flavor in dem dar bones.

That's a great idea Liz. I'd actually prefer thighs to breasts too. I guess since my local Chinese chicken curry has white meat I just thought that's what I should use. huh
