...the soup was a frozen leftover from a very big pot full....

Anything with liquid always improves with age.  When you eat it the same day you can discern the individual flavor of herbs and veggies like onion and celery.  When the food ages in the fridge for a day the strong flavors blend together more with the mild flavors while still retaining their character.  It's like the ingredients have become wedded.  That's the best I can describe it huh

I so envy you.  I haven't have fresh caught fish in so long.  I know the good local places in Mobile but Mobile brings back bad memories.  There are many good places in Gulf Port and Biloxi but I'll have to ask the locals around town which place is the best.  I have a strong hankerin' for red snapper.

I don't cook much but like to experiment with seafood. I used to make a yummy scallop chowder.

You can't get fresh fish at the supermarkets around there?

It comes in frozen and they thaw slowly on ice so the next day it looks fresh.  It's not like we have a fish monger here.  It's supermarkets and they're chains and they buy to suite the least common denominator. It's the same way with bread.  It's the same thing with meat.  I remember buying meat from a butcher who would tell me how long and at what temperature.  Not these days at least not around here.
