Sutffed pork chops made according to a recipe that sounded to good I had to try it.  I did almost exactly what the recipe said but I did not cook the pork until it was it was dead.  I cooked it to a nice juicy medium.  I used the thick butterflied chop I had in the freezer, cut it in two and stuffed both halves.  For the stuffing I used Panko bread crumbs because they're the best.  I used green onion rather than normal onion because I had some that wanted using up.  I went the recipe one better because I had fresh sage and fresh thyme..

There was a good but of chopping and measuring involved to satisfy one single person but it was so good it was worth it.  https://www.tasteofhome.com/recipes/herb-stuffed-pork-chops

We had home made Pizzas.  Son makes his own dough and sauce.  They are pretty good.
