Chicken enchiladas

Easy peasy and tasty:  Corn tortillas, left over roast chicken shreaded.  Wrap up the chicken in the tortillas, put in a casserole, pour canned green salsa on top, slap some plain yogurt over that, and grate a little cheese over everything.  Pop in a 325 oven till bubbly.
Always move forward. Never look back.
