I had a twice baked potato with butter, home made chili, and sour cream.  It was good but not memorable.

Do you mash/mix and then re-bake with cheddar on top??

I mashed and mixed put it back in the shell and popped it back in the oven for another 20 minutes.  I have the other half to eat tomorrow and I'll  mix in some grated cheddar.  I knew that something was missing ::)  I need some veggies with it, too.  I'm thinking of yellow squash with onions sauteed in butter with some steamed broccoli fleureretts tossed in toward the end of cooking.  Sounds good to me.   Since I've starting eating an egg for breakfast 'most every day I don't need meat with my main meal.

A fav of mine. Well minus the red gravy but with onions. I prefer fresh sausage over  old sausage also. Less chance of tomain.
