...LOL...who wants to cook?....we'll wing it with leftovers, etc....skies are getting blacker as the worst part of the storms move in.....flood warnings here...

I cooked!  I'm just sitting down to eat.  I done good and it was all made from scratch.  I had a chile Poblano stuffed with string cheese, battered and fried in lard.  I'm not big on tomato sauce so I made  a tomatillo sauce with fresh jalapenos, cilantro, and avocado in the food processor.  I may have the same thing tomorrow because I have another Poblano chile and the salsa is already made.  It was quite time consuming but worth it.  I think I'll grate a bit of sharp cheddar or Asiago into the cheese  filling.  The string cheese was too bland to stand up to the spicy flavor of the other stuff.
