We had a pork roast last night. Any ideas on how to prep and have the leftovers without adding a lot of fats and calories?

Crumble up the roast in a pan/slow cooker....and add a bottle of 'Sweet baby Rays' bbq sauce.....MMMMmmmmmm

..we ended up having the left over boneless pork ribs, with the twice baked potatoes and spinach.....mighty good...MMmmmm
