Will they gradually turn so it will be obvious early on? I have absolutely no experience with HBs so I can't keep my eyes off them.

When they turn, and why they turn is a mystery of genetics.....one theory is that there's a genetic 'trigger' in HB's that cause it to happen....they can. and have been reported to turn as adults even.....but the early expressing fry are the most desirable because they would seem to possess the strongest 'triggers'.....
