I had left over pot roast from the freezer.  I started the ham hocks, but if I were to continue with the recipe I'd have run out of time for WC until lights were out in the fish room.  I reached a stopping place, took out the hocks and put them in the fridge and refrigerated the stock I cooked them in so I can use it to finish the collards in rather than store bought chicken stock.

..indeed the stock will much richer than using chicken stock.... .....any pablanos left  ...one or two would really make it 'sing'....

Oh don't worry about it not singing.  I'm using a bunch of spices to make it sing plus lemon zest and lemon juice to make me wink.
