The Jamaican Gizzards and livers

It was good but not memorable.  It lacked umami.  I had it over rice but it might have been better with crusty French bread.  It's good enough to eat 3 more times but not good enough to freeze for later.  The dogs will have a treat.

I think of umami as depth of flavor.  Tomatoes are loaded with it as are mushrooms and shell fish.  When I tasted this while cooking and found it lacking I added some Thai fish sauce, but there wasn't much left in the bottle.  When I warm it up again I'll add a some soy sauce and see if that does the trick.

I just used plain white rice.

yup, I knew it had to do with glutamate but figured I'd better learn more about it....
