Oyster stew.  Perhaps the best I have ever had.

Melt a stick of butter in a large skillet and saute 1 c minced celery and 3 T minced shallots until soft but now brown. 
Heat 1 qt. heavy cream in a large pot and stir constantly until it's just short of boiling.
Add sauteed veggies and  24 to 32 ounces of  Oysters with their liquor.
Add kosher salt, freshly ground pepper, and a pinch or two of cayenne.
Stir constantly until edges of oysters start to curl.  Remove from heat and serve.

This is a real winner and takes very little time.
Always move forward. Never look back.
