Title: Saturday's dinner....

We put together about a 3 1/2 lb+ meatloaf, surrounded by potatoes, onions, tomatoes......should be enough, there's just two of us... huh

I made the meatloaf with:

(2) eggs
bread crumbs
salt
pepper
chopped onion
Worcestershire sauce (brings out the flavor of the chuck)(try it)
diced tomatoes
later glaze with catsup..... |^|

I just put a meatloaf in the oven, myself.  Mine's around 1 1/4lbs.  Ground chuck, Choriso, 1 egg, green pepper, onion, oat meal, and s&p.  The glaze is ketchup, mustard and brown sugar.

..the diced tomatoes have green pepper too....gotta have some green pepper ;D

Sometimes we just use 'Mrs. Grasses' onion soup mix....it makes a great juicy meat loaf...nothing else needed....

I used salsa in mine rather than plain tomatoes.

They're a diced tomato with green pepper mixed in....salsa ?....little spicy for traditional meat loaf.....but might try it with the Chorizo??

I used the mild.  It adds just a touch of zip, nothing that would blow your head off.

Sure, sounds good too.....spicy doesn't bother me....I love me peppers....MMMmmm... ;D

Your glaze is a lot like we use for hams....minus the catsup, of course.....prepared mustard/brown sugar.....delicious..but we score the top, and add cloves too....sometimes pineapple rings with a cherry...yada yada...

Just finished having the meat loaf meal.....peaches on the side.........outstanding!!!....even better, there's a nice bit left for sandwiches, or another meal?..
I think there's some angel food cake left too....Hmmmm....yup +1..... w!w
