We do too.....most folks don't realize just how big a difference in flavor there is when using them.

True. But there are a few that are better dried. Their flavors are too mild and need to be dried and concentrated.

..true....like oregano, thyme, and rosemary ....but you need to add them when cooking to get the best flavors from them...
The other thing about fresh spices and herbs is the wonderful aroma they give off in the kitchen when you use them.
