Worry not.  I shall learn how.  My first choice ace in the hole has come through for me.  It's the kid, now grown man who worked for me many years ago.  He was born in Mexico and has family members and friends that know how to do it.  We texted back and forth just now.  He's going to stop by tomorrow and talk and fix me up with a real Mexican cook.
