Title: Today's food
Post by: LizStreithorst on November 04, 2018, 08:35:53 AM
For the past few weeks I have had no appetite.  One day last week I didn't eat anything!  I've lost some weight but I'm not wasting away.  Still, I want this hunger strike that my body has put me on to end.

Today I'll make this but without the Mediterranean additions.  A baked chicken is always good and left overs are easy to make into other things.  https://www.themediterraneandish.com/crispy-spatchcocked-chicken-recipe/

I'll have these two things as sides.  https://leitesculinaria.com/74494/recipes-baked-macaroni-and-cheese.html#recipe  https://leitesculinaria.com/88655/recipes-green-bean-casserole.html

I'll just make 1/2 of the casserole because I'm just one person.  It should warm up nicely for seconds or thirds as long as I fry new onions.  The mac and cheese should freeze perfectly in single serving ramekins so I may make the entire recipe and stick most of it in the freezer.

I have never smelled a baked chicken smell this good!  I need to keep the internal temp of the chicken at 150 for 10 minutes.  I'll have to let the oven cool down to put the mac and cheese in.  I decided to make the green bean casserole tomorrow.  I'll have left overs galore, and I adore leftovers.
