Tuesday's dinner.
I swear to God, I make the world's best meatloaf. I use a lb of ground round, a lb of sweet Italian saucage, a cup of quick cook oatmeal, an whisked eggs and from there I wing it. This time I put in a minced sauteed onion and red pepper, what was left of my jar of smoked salsa, a good dash of soy sauce African spicy seasoning, mixed gently and formed into a free-form loaf. The topping was a mix of French's yellow mustard and Sriracha sauce for spicy sweetness. It sounds like a crazy mix of countries' flavors, but they sure do work together. I need to try to make it again and measure what I use so I can write a recipe.
