Nothing gives you meals on the cheap for days better than a roast chicken.

I'll be on a cooking jag this weekend.  I made one fancy stuffed pork chop a week or two ago.  It was so good that this time I have 2 in the freezer and one in the oven.

Tomorrow will be my big cooking day.  I'm going to make this beautiful Gumbo.  I'll halve the recipe because it makes enough Gumbo for an army.  I bought more freezer containers.  I like my roux darker that what's in the gumbo in the photo.  I'll also deviate from the recipe by using a Poblano pepper rather than a green pepper (the flavor is better and the Poblano kicks up the heat a bit).  I may saute a serano pepper and add it for extra heat, too.  Cayenne is overrated in my opinion.  You get heat but not a lot of flavor from it.
