I made that Stroganoff that I decided against making last night.  It's good but way different from my usual stroganoff.  It doesn't have the acidity that I'm used to in the dish.  It is full of umami.  I'll have it over mashers made with creme fraiche instead of butter.

...my Mom occasionally used dry vermouth in her Stroganoff....

I think that the dry vermouth would be more to my taste but I'm sampling it the way I made it.  It's different but still very flavorful.
