I'm a heathen but I am not a food heathen.  I wouldn't eat that.  I'll be starting my braised short ribs soon.  I finally got to the store and bought pancetta and shallots.  I also picked up ground chuck for meatloaf.  I got the Chorizo it calls for at the tienda while I was there yesterday.  The closest I'll get to heather food is making chicken tenders.  I bought boneless skinless breasts to slice up and buttermilk to dip them in before the bread crumbs and deep frying.  Not the most healthful food in the world, but they're good to take to work because to me they're as good cold as they are hot.

Instead of bread crumbs use Ritz cracker crumbs.  You will never go back.
