Sunday dinner===MMMmmmmm

..I took a couple packs of meat, wrapped in foil, out of the freezer yesterday.....sooooo...I figured that I had pork chops and a mystery package....I opened the 1st pack and yup..pork chops...tossed 'em in the slow cooker and opened the 2nd pack to see if I had chops there too.....nope...it was the other half of the big pot roast that we cut in half, to have two good meals....HHmmmm...soooo I plopped it a roasting pan, put a pkg of dry onion soup mix all over it and tossed it in the oven  :D :D :D :D :D :D :D

...just added a can of cream of mushroom soup to the chops in the slow cooker  |^|....

..gotta tell ya....it smells freaking awesome in here right now !!!!!!!!!!!!!!

..we'll flip a coin and eat one today, then just reheat the other for another great meal tomorrow....... |^| |^| |^| |^| |^| |^| |^|

Late last week I spatchcocked a chicken and roasted it exactly how Kenji instructed.  Let me be struck dead I have eaten a roast chicken as good as this one.  Since then I've stolen it's wings and legs to eat without more preparation.  OMG they were good.  I used the thighs on tostadas and quesadillas.  I was down to the breast.  It's always my least favorite part of the chicken.  I cut off a slice and it was buttery soft and flavorful.  That's the last thing I expected from a roast chicken breast! 

All I was prepared to do was make chicken salad from what I figured would be dry flavorless breasts.  I made chicken salad with these works of art.  I tossed in a chopped avocado to help with the blending of flavors.  It's in the fridge now.  All it's flavors are getting comfortable together.  I'll have some a bit later on a bed of lettuce.  It will be better tomorrow.
